Christmas Recipes: Cakepops And Cupcakes

The Christmas bakery has opened! Just in time for Advent Sunday, there is a small Christmas Cake Pops and Cupcakes buffet mixed of fir trees, snowmen and delicious cinnamon cupcakes.

I took for the Cakepops and the Cupcakes first the same cake base dough. The dough is basically enough for about 40 Cakepops or about 20 Cakepops and 12 Cupcakes.

Ingredients Base dough recipe cakepops and cupcakes

  • 4 eggs
  • 230 g powdered sugar
  • 240 g of soft butter
  • 360 g sifted flour
  • 1 pck of baking powder
  • Mark of a vanilla dish
  • Butter and flour for the box shape

For the Cake Pop Frosting (for 40 pieces) you need:

200 g white chocolate
250 g of soft butter
200 g of quark 20%
Mark of a vanilla dish

For the Cupcake Frosting (for 12 pieces) you need:

250g mascarpone
100g powdered sugar
For the cake stir eggs and sugar until frothy and then stir in the soft butter. Flour the flour with the baking powder and incorporate the milk and vanilla into the dough.

Cupcakes: From the basic dough I took the half and worked to cupcakes. To the cupcake dough I have added 1 EL cinnamon and 2 tbsp chopped almonds.

12 Lay out the troughs of a muffin mold with a paper baking tray. Spread the dough evenly into the troughs. Bake in the preheated oven (electric cooker: 175 ° C / circulating air: 150 ° C / gas: step 2) for about 20 minutes. Remove from oven. Muffins on a cake grid cool down.

Carefully stir the mascarpone with the stirrer and slowly pour the powdered sugar into it. Only so long beat until a nice consistency is reached. Fill the frosting into a spray bag with star grommets and spray onto the cupcakes. Decorate with sugar pearls.

Cake: The other half of the dough I have filled for the Cake Pops in a buttered and dusty box shape and the cake in the preheated oven (electric cooker: 175 ° C / circulating air: 150 ° C / gas: level 2) Baked for about 45 minutes. Make the Stabchentest!

Cake Pop Frosting: For frosting, chop the chocolate and melt in a warm water bath or at 360 watts in the microwave. Combine with soft butter, curd and vanilla, and let cool for 1 hour in the refrigerator.

Cake Pop Mix: Finely crumble the lukewarm cake with the hands and let it cool for about 2-3 hours in the refrigerator. Add the Cake Pop Frosting portionweise into the crumbs until it has a good formable consistency. In a refrigerator, wrap the mixture and place in the fridge for at least 8 hours (preferably overnight). Only then can further processing.

Schneemänner: For the snowmen I have prepared from the basic mass about 30 g heavy pieces and formed with hands to round balls. Round cake pops can also be produced with silicone bake molds.

For the glaze I worked with glaze lenses (white). These can be easily melted and do not have to be dyed. I melted the glaze in the water bath. In order to achieve the correct consistency, add a little neutral cooking oil (observe the preparation instructions on the pack instructions).

Then dip the stick about 1 cm deep into the liquid glaze and then put halfway into the cake pop. Allow to dry for a few minutes.

For the glazing keep the bowl with the liquid glaze slightly obliquely and the Cake Pop immersed and slowly turn. Allow the excess glaze to drain well.

After drying I gave the snowman a face. The black elements are sugar beads which I pressed into the glaze. I painted a small nose with sugar.

Christmas trees: Take a large piece (approx. 70 g) from the base mass and press smoothly with the palms on both sides. Now cut out the fir tree. Always work with individual pieces and put the basic mass back into the refrigerator.

Then dip the stick about 1 cm deep into the liquid glaze and then put halfway into the cake pop. Allow to dry for a few minutes.

The glaze actually works just like the Schneemännern only that I have used here green glaze lenses. After dripping the glaze, I immediately decorated with sugar beads.

Cakepops are well chilled about 1 week durable.

Have fun in the Christmas bakery!
